Ingredients

  • 1/4 cup cottage cheese
  • 1/4 cup old fashioned oats
  • 1 large egg
  • 1 pinch salt
  • 1 tsp monk fruit sweetener

Instructions

  • Combine all ingredients to a magic bullet, blender, or food processor and blend until pancake batter consistency. Heat a non-stick skillet with olive oil spray. Add 2-3 tablespoons of batter at a time flipping after 2 minutes. (reduce heat if starting to brown too quickly. These pancakes do not bubble like normal pancakes – be mindful of the cooking time)
