Ingredients

  • 1 flatbread wrap (I use fit and active 90 calories from Aldi)
  • 2 tbsp mozzarella cheese
  • 1/2 cup spinach
  • 1 medium Roma tomato
  • 2 tbsp onion (depending on preference)
  • 1 large egg

Instructions

  • Preheat the oven to 350. Place flatbread on a baking sheet and add mozzarella spreading out evenly. Saute spinach, tomato and onion together in a nonstick skillet. Take out flatbread and put veggie mixture on. In the same pan spray with olive oil spray and crack an egg. Cover and allow the egg to cook for 2 minutes. Once cooked to liking add it to flatbread.
