
Tofu and Green Onion
Servings 4 people
Ingredients
- 1 block firm or extra firm tofu
- 1 tbsp canola oil
- 1 tsp sesame seed oil
- 3 tbsp coconut aminos
- 4 cloves garlic (minced)
- 1 tsp ginger paste
- 1 tsp sriracha
- 1 bunch green onion (chopped)
- 1 12oz bag of spinach
- 1 bag of cauliflower rice
Instructions
- Cut tofu in half lengthwise and place on a baking sheet, place dish towel on top and then a cast iron skillet or other heavy object. Allow tofu to drain for 40 minutes. Once that time is up, cut the tofu into cubes and place in a hot large skillet with the canola oil and 1 tablespoon coconut aminos. While the tofu is cooking prepare the cauliflower rice according to the package. Stir tofu occasionally. After 8 minutes add the remaining coconut aminos, garlic, ginger, sriracha, green onion, sesame seed oil. Allow these to cook for 2 minutes and then add all of the spinach to cook for an additional minute before turning off heat. Serve tofu mixture over cauliflower rice.
