Ingredients

  • 6 large eggs
  • 4 egg whites
  • 2 cup chopped spinach fresh or frozen (or other veggie of choice)
  • 2 cup bell peppers (or other veggie of choice)
  • 1/2 tsp garlic powder or garlic salt
  • 1/2 tsp oregano
  • 1/2 cup almond or regular milk
  • 1 pinch salt and pepper to taste
  • 1 cup Mexican cheese (optional for added protein)

Instructions

  • Preheat the oven to 375 degrees. Whisk ingredients. Pour mixture into greased muffin tins and bake for 20 minutes or until center is cooked. Serving size is 2 egg cups.
